Alipus Mezcal first began as a "social impact project", with the aim of supporting traditional mezcal producers and their lands in several regions in Oaxaca, Mexico. Alipus San Andres represents one of these regions. The Mezcal is fermented using wild yeasts in cypress vats before it is double distilled in a copper pot still. On the nose are notes of roasted maguey caramel and white flowers; with hints of wood and a medium lingering flavor.
